Cheese bowls with tomato-cheese salad

Serves 4 | 20 minutes

Ingredients

  • 150 g prima Donna fino
  • 2 tbsp flour
  • 1 tbsp dried Italian herbs
  • 200 g cherry tomatoes, chopped into small pieces
  • ½ red onion, finely sliced
  • 2 basil sprigs, finely chopped
  • 75 g prima Donna fino, finely diced
  • 1 tbsp extra virgin olive oil
  • ½ tbsp lime juice
  • Pepper and salt

Description

  1. Preheat the oven to 180˚C
  2. Grate the Prima Donna cheese, mix with the flour and make small mounds/circles out of this. Place these on a baking tray with baking paper and keep in mind that the cheese will spread out so keep enough distance.
  3. Put it in the oven and let the cheese melt for about 5 minutes or until golden brown.
  4. Remove from the oven and let it rest for a moment. Then carefully scoop a cheese round from the paper and place on the bottom of a glass.
  5. If all goes well, the cheese will form around the glass like a bowl. Let this harden very briefly and then carefully remove. If the cheese stays straight help it out a bit.
  6. Make the tomato/cheese salad by mixing the tomatoes, sliced onion, fresh basil with the cheese cubes.
  7. Make a simple dressing with olive oil, lime juice and salt and pepper. Stir a small amount into the salad and serve the salad in the cheese trays.
