Rub the inside of the fondue pan with half the garlic clove. Add the white wine to a saucepan and heat over low heat until it begins to simmer.
Now add the grated cheese slowly to the pan, while stirring with a wooden spoon. Keep on stirring until the cheese is completely melted and smooth.
Mix the cornstarch with the lemon juice and add to the cheese fondue. Stir well until the mixture binds nicely and thickens a bit.
Add mustard, nutmeg and ground fresh pepper. Taste and adjust seasoning to your liking. Pour the cheese fondue into a ready warm fondue pan on a rechaud or hot plate.
